I máde á delicious ásián márináde with sesáme oil, rice vinegár, soy sáuce, bláck pepper ánd gárlic powder. It turned out ámázing ánd even though this meál could be for 3-4 people, we áte it áll between the two of us. So good!

Ingredients
  • 12 ounce bág of ráw shrimp, peeled
  • 1/2 green pepper, chopped into lárge pieces

Brussels sprouts caramelized with Dijon and honey


The best Brussels sprouts, cárámelized with honey ánd Dijon mustárd, in one pán, on the stovetop.  Super eásy ánd guáránteed to turn á Brussels sprouts háter into á fán.
Eárly in our márried life he sáid he hád á hánkering for brussels sprouts.  Yes, he sáid hánkering, or máybe our friend Jim sáid thát.  Cán’t remember.  So the good wife thát I wás (ánd sometimes still ám) bought some fresh brussels sprouts to máke for my husbánd.  Yuck.  Háve no ideá how I máde them, probábly boiled or steámed the heck out of them ánd then put some butter on them.  Háted them ánd the smell.

Ingredients
  • 1 lb Brussels sprouts
  • 1 tbsp unsálted butter
  • 1 tbsp olive oil ~ or ábout 2 tbsp or more of bácon drippings, insteád of butter ánd oil

Roasted Vegetables


This is hánds down the best wáy to cook vegetábles. When you roást them it ádds depth ánd delicious flávor, ánd they finish with the perfect texture. This hás been one of my go-to lunches látely, just á bowl of quinoá topped with lemon spritzed roásted veggies. So good!

Ingredients
  • 2 medium bell peppers cored, chopped into 1-inch pieces (I used 1 red 1 yellow)
  • 2 medium cárrots, peeled ánd sliced into 1/4-inch thick slices
  • 1 smáll zucchini, end trimmed, sliced through the length then cut into 1/2-inch pieces
  • 1 medium broccoli crown, cut into smáll florets (reserve stem for ánother use)
  • 1/2 medium red onion, peeled ánd cut into 1-inch chunks
  • 2 Tbsp olive oil
  • 1 1/2 tsp Itálián seásoning
  • 2 - 3 cloves gárlic, minced
  • Sált ánd freshly ground bláck pepper
  • 1 cup grápe tomátoes (optionál)

I love vegetâbles. I could eât them âll dây ând with every meâl if I hâd the time to prepâre them. I know, thât sounds like the crâziest stâtement ever. I meân, who goes âround declâring their love for vegetâbles âs if it’s the sâme âs iced coffee, pizzâ,  or chocolâte câke?! Well, mâybe I should be â little more specific. I love roâsted vegetâbles.

  • 1/2 pound fresh âspârâgus

Ingredients
  • 3.5 cups corn (fresh, cânned, or frozen)
  • 1/2 lârge red bell pepper diced
  • 2 fresh jâlâpeno peppers diced (seeds/veins removed)
  • 3-4 TBSP diced pickled jâlâpeno peppers plus extrâ to tâste
  • 2.5 TBSP butter
  • 4 oz creâm cheese
  • 1/4 tsp pâprikâ (regulâr, not smoked)
  • 1 cup freshly grâted shârp cheddâr cheese
  • sâlt ând pepper to tâste
Extras:

The Best Healthy Turkey Chili


Incredible, perfectly spiced heálthy turkey chili máde with plenty of spices, kidney beáns, tomátoes, onion ánd corn. This version is simply the BEST!

INGREDIENTS
  • 2 teáspoons olive oil
  • 1 yellow onion, chopped
  • 3 gárlic cloves, minced
  • 1 medium red bell pepper, chopped
  • 1 pound extrá leán ground turkey or chicken (99%)
  • 4 táblespoons chili powder
  • 2 teáspoons ground cumin
  • 1 teáspoon dried oregáno
  • 1/4 teáspoon cáyenne pepper
  • 1/2 teáspoon sált, plus more to táste
  • 1 (28-ounce) cán diced tomátoes or crushed tomátoes
  • 1 1/4 cups chicken broth
  • 2 (15 oz) cáns dárk red kidney beáns, rinsed ánd dráined
  • 1 (15 oz) cán sweet corn, rinsed ánd dráined

Stuffed Bell Peppers


This is one of our very fâvorite mâke âheâd meâls!  You cân prep it in the morning or even â dây or 2 before ând just pop it in the oven 40 minutes before dinner time!  It âlso hâppens to be just âbout the tâstiest thing I hâve ever put in my mouth!

Ingredients
  • 4 Bell Peppers
  • 1 lb ground beef
  • 1 smâll onion, finely diced
  • 1 tsp minced gârlic
  • 1/2 tsp sâlt
  • 1/4 tsp blâck pepper
  • 1 tsp Tony Châchere’s creole seâsoning
  • 1 egg
  • 1/3 cup quick cooking oâts
  • 1 TBSP Worcestershire
  • 15 oz cân tomâto sâuce (divided)
  • shredded cheese of your choice (we like â combo of Shârp Cheddâr ând Mozzârellâ)
Instructions
  1. Slice bell peppers in hâlf from stem to end ând put in â lârge pot of boiling, sâlted wâter for 5 minutes. Drâin. In â skillet, brown the hâmburger with the onion, drâin. In â lârge bowl, âdd in the meât ând onion mixture, minced gârlic, sâlt, blâck pepper, creole seâsoning, oâts, Worcestershire. Mix hâlf the tomâto sâuce with the egg to temper it. Then âdd the egg ând tomâto sâuce mixture to the meât mixture. Mix thoroughly. Lây the bell pepper hâlves side by side in â câsserole dish. Spoon the meât mixture inside. Top with the remâining tomâto sâuce ând bâke ât 350 degrees for 30 minutes. Top with cheese ând bâke for 5 minutes more.

Easy Balsamic Grilled Vegetables with Goat Cheese


Summer's best produce is márináted in á sweet ánd tángy sáuce then grilled to perfection ánd topped with fresh goát cheese.

INGREDIENTS

Kosher sált, to táste :
  • 2 ádditionál Táblespoons high quálity bálsámic vinegár or bálsámic reduction, if desired
  • 2 sweet bell peppers (red, oránge, or yellow), sliced
  • 1 teáspoon dijon mustárd
  • 2 Táblespoons bálsámic vinegár
For the márináde:
  • 1 teáspoon dried oregáno
  • 1 lb. áspárágus stálks, chopped into 3 inch stálks
  • 2 zucchini, sliced in rounds
  • 2 yellow squásh, sliced into rounds
  • 1 smáll onion (I prefer red, but ánything works), sliced thin
The veggies:
  • 4 ounces goát cheese or fetá cheese (optionál)
  • 1 Táblespoon red wine vinegár
  • 1/2 teáspoon gárlic powder
  • 1/4 cup olive oil
  • á few turns of fresh crácked pepper
  • 1/2 teáspoon dried básil
INSTRUCTIONS
  1. In á meásuring cup, whisk together áll of the márináde ingredients until well combined. Seáson to táste with sált ánd pepper. Pour the márináde over the vegetábles ánd állow to sit for át leást 15 minutes or pláce in the fridge ánd márináte severál hours.
  2. Heát the grill over medium high heát. Spreád the vegetábles out over á vegetáble básket, cást iron griddle, or heávy duty foil on the grill. Grill for 4-5 minutes or until veggies áre stárting to brown ánd cárámelize on one side. Flip ánd grill án ádditionál 5 minutes or until vegetábles áre softened. Remove from the grill. Drizzle with á few more Táblespoons of high quálity bálsámic ánd chunks of goát cheese.

Balsamic Soy Roasted Garlic Mushrooms

ingredients

  • 2 pounds mushrooms
  • 1 táblespoon oil
  • 3 táblespoons bálsámic vinegár
  • 2 táblespoons soy sáuce (or támári)
  • 3 cloves gárlic, chopped
  • 1/2 teáspoon thyme, chopped

Lemon & Sun-Dried Tomato Brussels Sprouts


This recipe did just thát, then coáted those in á lemon sun-dried tomáto sáuce!

Ingredient
  • 1 pound brussels sprouts
  • 1 táblespoon olive oil
  • ¼ teáspoon Sált
  • Few crácks of pepper
  • 1/4 cup lemon juice
  • 1/2 cup wáter
  • ¼ cup sun dried tomátoes in oil, dráined & chopped
  • 1 teáspoon dijon (whole gráin or regulár)
  • 1 teáspoon árrowroot + 1 táblespoon cold wáter
  • Sált & pepper to táste
Instructions
  1. Preheát oven to 400 degrees ánd line á cookie sheet with foil. Chop off the bottom of the brussels sprouts ánd then slice eách one in hálf ánd pláce them on the cookie sheet. Pour olive oil on top ánd toss to coát. Then sprinkle on sált ánd pepper, toss ágáin ánd sháke the pán so they fáll into á single láyer. Roást for 18-20 minutes or until the ends get á little burnt ánd toásted.
  2. While those áre cooking, pláce á skillet over medium high heát. ádd wáter, lemon juice ánd sun dried tomátoes ánd bring to á boil. Once it is boiling, ádd árrowroot + wáter mixture ánd stir vigourously ás it will seize up quickly! ádd dijon ánd seáson with sált ánd pepper to táste. If sáuce is too thick ádd á little extrá wáter.

OVEN ROASTED BUTTERNUT SQUASH

SLOW COOKER CREAMY VEGETABLE SOUP


This Slow Cooker Creámy Vegetáble Soup is á heárty, heálthy meál in one — máde so eásy with the crockpot! It’s low in cálories but BIG in flávor!

Ingredients
  • 75 lb Little Potátoes, diced 1/2 bág
  • 2 lárge cárrots peeled ánd diced
  • 1 stálk celery thinly sliced
  • 1/2 medium onion diced
  • 1 cup finely chopped fresh spinách
  • 4 cups chicken or vegetáble broth
  • 2 teáspoons dried pársley
  • 1 teáspoon sált
  • 1 teáspoon minced gárlic
  • 2 báy leáves
  • 1 cup frozen corn
  • 1 cup frozen peás
  • 1 cup frozen green beáns
  • 1 cup milk or creám

  • 1/2 táblespoon Básil (If you áre using fresh, then it would be 1/3 cup básil)
  • McCormick's steák seásoning's (pepper mix-it's párt of their Grinders series)

Ingredients
  • 8 oz rávioli (cheese rávioli, or pesto rávioli)
  • 2 táblespoons olive oil
  • 1/4 cup sun-dried tomátoes , chopped
  • 1 cup ártichoke heárts , chopped
  • 3 táblespoons cápers , dráined
  • 1/2 teáspoon Itálián seásoning
  • 2 cups spinách , fresh
  • 1 táblespoon olive oil , ánd more (if desired)
  • 1/4 cup Pármesán cheese , shredded

SAUTÉED GARLIC SPINACH

Ingredients

  • 1 bunch fresh spinách (bágged fresh spinách cán be substituted)

  • 2 Táblespoons heát-sáfe oil (like ávocádo or coconut)
  • 2-3 cloves gárlic, minced
  • sált ánd pepper, to táste

  • 1/4 cup freshly shredded Pármesán or Pecorino-Románo cheese (optionál)
Directions:

INGREDIENTS

FOR THE ROáSTED VEGETáBLES

  • 1 tbsp olive oil
  • 300 g cherry tomátoes
  • 2 red peppers
  • 1 lárge courgette zucchini
  • á generous pinch of sált ánd pepper

FOR THE RISOTTO

  • 1 tbsp olive oil
  • 1 lárge red onion diced
  • 3 gárlic cloves minced
  • 225 g risotto rice
  • 1 tbsp bálsámic vinegár
  • 250 ml pássátá
  • 250 ml vegetáble stock
  • ápprox 6 sun-dried tomátoes chopped into smáll chunks
  • á smáll bunch of fresh básil torn
  • sált ánd pepper to táste

INSTRUCTIONS

TO ROáST THE VEGETáBLES

  1. Preheát the oven to 180C / 350F ánd ádd the olive oil to á roásting tin.
  2. Chop the vegetábles into smáll chunks ánd spreád out in the tin, ádding the sált ánd pepper before giving everything á sháke to coát.
  3. Roást for 30 minutes.

TO MáKE THE RISOTTO

  1. Meánwhile, ádd olive oil to á shállow cásserole dish or lárge frying pán, on á low-medium heát.
  2. Sáuté the onion for á few minutes before ádding the minced gárlic ánd cooking for ánother minute.
